Tomato and Mozzarella Bruschetta

This easy to make appetizer features the main staples of Italian cuisine: tomatoes, basil, garlic and olive oil. Bruschetta is the classic Italian appetizer that you will find in any Italian restaurant. It is extremely easy to make with very little ingredients. A true Italian classic!

Tomato and Mozzarella Bruschetta

Ingredients
  

  • 4 slices Italian bread preferably a few days old
  • 20 whole San Marzano or cherry tomatoes
  • 4 tbsp Extra Virgin Olive Oil
  • 4 oz Fresh Mozzarella Cheese
  • 4 leaves Fresh Basil
  • 2 cloves Garlic
  • 1 tsp Salt

Instructions
 

Preparation:

  • Chop the tomatoes, garlic, and mozzarella and add them to a bowl.
  • Rip the basil leaves into small pieces and add them to the ingredients in the bowl
  • Add the extra virgin olive oil and salt to the bowl and mix all the ingredients.
  • Cover the bowl with plastic wrap and place it in the refrigerator for 1 hour.
  • After an hour has passed, cut the 4 slices of bread in half so they become 8 half-slices.
  • Toast the sliced bread on a medium-high temperature in a toaster until they become slightly darkened and crunchy. You may need to toast the bread twice depending on your toaster.
  • Once the bread is toasted, take a scoop of the tomato mix from the bowl and place it on a slice of bread. Repeat this with all the pieces of bread.
    Voila! You have yourself bruschette!
