Easy and Quick Zucchini and Smoked Salmon Appetizer Rolls

Sometimes appetizers are the best part of a meal. Often times I gorge myself full of appetizers before the first course even comes out. We decided to make a simple and healthy appetizer that has minimal ingredients, is visually pleasing and is delicious! I am almost tempted to call this zucchini sushi!

The key to this dish is in the grilling of the zucchini. For a better visual appeal, don’t move the zucchini while it is cooking and only flip it once. This will give it the nice linear grill marks.

A quick, easy and healthy appetizer made with grilled zucchini, smoked salmon and cream cheese.

Ingredients

  • 5 medium zucchini

  • 2 packages of your preferred smoked salmon

  • Philadelphia Cream Cheese

  • Toothpicks

Directions

  • Slice the zucchini into thin vertical strips about 1/4″ thick.
  • Heat up a grill pan on the highest temperature.
  • Grill the sliced zucchini for about 3 minutes on each side. Try not to move the zucchini while grilling to get those awesome grill marks.
  • After grilling the zucchini, let them sit for about 5 minutes to cool down.
  • Once the zucchini are cooled, spread a thin layer of cream cheese on one side.
  • Add a thin slice of salmon that matches the size of the sliced zucchini.
  • Roll up the zucchini and stick a toothpick down the middle.
  • Repeat this for all the slices of zucchini.
  • Buon Appetito!

Notes

  • You can also substitute any smoked fish or even sashimi grade fish to create a sort of sushi dish!
