Insalata Caprese – Caprese Salad

There is nothing fresher on a hot Italian summer day than a crisp, cold and refreshing Caprese salad. This recipe is extremely easy to make and shouldn’t take more than 5 minutes for the prep-time. Called Insalata Caprese in Italian, this dish originates from the stunning and beautiful island of Capri near Naples. To me, this dish is the iconic Italian summer dish. Bonus points if you use fresh Mozzarella di Bufala (Mozzarella from water buffalo). The fresh basil coupled with the tomato and mozzarella gives you a refreshing start to your meal as an appetizer. It can also standalone as an alternative to a salad. However you eat it, I am sure you will like it.

Insalata Caprese – Caprese Salad

A refreshing summertime dish originating from the beautiful island of Capri that uses the basic ingredients of Italian cuisine.

Ingredients
  

  • extra virgin olive oil
  • 2 whole large tomatoes
  • 1 package Galbani Fresh Mozzarella
  • salt as needed
  • pepper as needed
  • 3-4 leaves fresh basil

Instructions
 

  • Slice the tomato into semi-thin slices.
  • On a plate, place all the sliced tomatoes in whatever pattern or fashion that you would like. I personally like to arrange them in a circular pattern as it is very visually pleasing.
  • After you place all the tomatoes, sprinkle some salt all over the tomatoes.
  • Place a mozzarella slice on each tomato.
  • Lightly drizzle some olive oil on top of the tomatoes and mozzarella.
  • Hand-rip the basil leaves into small pieces and sprinkle evenly on top of the tomatoes and mozzarella.
  • Add a dash of pepper.
  • Place the dish into the refrigerator for about 20 minutes prior to eating if you want the dish to be extra cold and refreshing. Buon Appetito!
