Italian Sausage and Rustic Rosemary Potatoes

One of our favorite dishes, this rustic and homey dish is made with delicious Yukon Gold potatoes, Italian sausage and rosemary. Rosemary is such a powerful and flavorful spice and gives the potatoes a delicious taste unlike any other. Rosemary is used extensively in Italian cuisine especially when seasoning potatoes and chicken. We used rosemary fresh from our garden and dried it for one day before using it to cook.

Rustic Rosemary Potatoes with Italian Sausage

Ingredients
  

  • 15 whole Yukon Gold Potatoes
  • 5 whole Italian Sausages
  • 3 cloves garlic peeled
  • 5 tbsp Extra Virgin Olive Oil
  • ½ tbsp Salt
  • ½ tbsp pepper
  • 2 tbsp Dried Rosemary leaves

Instructions
 

Ingredient Prep:

  • Peel the skin from the potatoes and dice the potatoes into ½ inch pieces.
  • Slice all the garlic cloves in half.
  • In a frying pan, cook the sausages for 5 minutes on a medium-high heat. The goal here is to cook the sausages halfway and then finish cooking them in the potatoes later.
  • Remove the sausages and cut them into ½ to 1 inch pieces as preferred.
  • Bring a pot of water to boil. Add the potatoes and boil them for 5 minutes. When they are done, drain the water and potatoes into a colander.
  • In a separate frying pan, add the olive oil and garlic and cook the olive oil for 2 minutes so the garlic can release it's flavors into the oil.
  • Add the potatoes into the fry pan.
  • Cook the potatoes on high heat for 5 minutes stirring occasionally. The potatoes will start to turn a golden brown color.
  • Add the cut sausages into the potatoes and mix well with the potatoes.
  • Cook the potatoes and sausages for another 5 minutes stirring occasionally.
  • Add the salt, pepper and rosemary and stir well.
  • Turn off the heat and place a lid on the pan. Let the potatoes sit for another 5 minutes while stirring occasionally.
  • Before plating, make sure the sausage is cooked well. Buon Appetito!

Notes

For this recipe, I used 2 fry pans instead of 1 as there was too many potatoes to fit in one pan. If you have a bigger pan that can accommodate all the ingredients, feel free to use it.
