Summer Italian Rice Salad

It’s summer, it’s hot and I don’t want to cook! I got the perfect solution. Check out this crisp and refreshing cold summer Italian rice salad made with arborio rice.

This salad is the perfect meal on a hot summer day while laying on the beach. It is meant to be eaten cold and can stay in the refrigerator for a long time. For this recipe, I used arborio rice. There are other types of rices you can use and feel free to substitute for any type of rice.

A refreshing summertime dish that incorporates various ingredients such as arborio rice, olives, corn and tomatoes. A perfect meal for a hot summer day on the beach for when you don’t want to eat hot food.

Ingredients

  • 3 cups of arborio rice

  • 1-2 tomatoes

  • 1/2 cup of sweetened corn

  • 10-15 green olives

  • 3-4 basil leaves

  • 2 5oz cans of tuna in oil

  • Extra virgin olive oil

  • Salt as needed

  • 4 cups of water

  • 5-6 canned artichokes

Directions

  • Cook the arborio rice in the 4 cups of water for about 30 minutes.
  • Let the rice cool down for about 30 minutes.
  • Chop up the tomatoes, olives and artichokes.
  • Add the tomatoes, olives, artichokes, corn, tuna and basil leaves into the rice.
  • Add some olive oil and salt and mix the rice well.
  • Place the rice into the refrigerator for 1 hour to cool down.
