Leftover Pasta? Make a Neapolitan Frittata di Maccheroni!

Do you have leftover spaghetti that is just sitting in the fridge? Turn it into a classic Neapolitan street food dish. In Naples, the dish is called ‘A Frittat e Maccarun and is commonly eaten as a street food or picnic food. Based on the principle that no food goes to waste, this dish was invented to use every last bit of pasta in order to maximize resourcefulness. Neapolitan Frittata di Maccheroni

A classic street food recipe from Neapolitan cuisine which you can find from street vendors walking the streets of Naples. Made with cooked pasta and eggs.

Ingredients
  

  • 1 tbsp Olive Oil
  • 300 grams leftover cooked pasta
  • 4 whole eggs
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

Ingredient Prep:

  • Crack open all 4 eggs in a bowl that is large enough to whisk in. Add the pepper and salt.
  • Whisk the eggs together until everything is mixed evenly.

Cooking:

  • In a medium sized frying pan, heat the olive oil on a medium-high temperature.
  • Add the pasta and spread it out evenly.
  • Pour in the egg mix and try to ensure even distribution.
  • Cook for 5 minutes on a medium heat. The bottom part of the frittata will form cooked layer similar to an omelet.
  • Flip the frittata onto the opposite using another fry pan while trying to maintain it's form.
  • Cook for another 5 minutes.
  • Once the frittata is ready, you can cut it like a pizza slice to serve. Buon Appetito!

Notes

If you don’t have any leftover pasta and you would like to make this dish, simple cook 300 grams of whatever pasta you like in boiling water and substitute.
