It’s summer, it’s hot and I don’t want to cook! I got the perfect solution. Check out this crisp and refreshing cold summer Italian rice salad made with arborio rice.
This salad is the perfect meal on a hot summer day while laying on the beach. It is meant to be eaten cold and can stay in the refrigerator for a long time. For this recipe, I used arborio rice. There are other types of rices you can use and feel free to substitute for any type of rice.

Ingredients
3 cups of arborio rice
1-2 tomatoes
1/2 cup of sweetened corn
10-15 green olives
3-4 basil leaves
2 5oz cans of tuna in oil
Extra virgin olive oil
Salt as needed
4 cups of water
5-6 canned artichokes
Directions
- Cook the arborio rice in the 4 cups of water for about 30 minutes.
- Let the rice cool down for about 30 minutes.
- Chop up the tomatoes, olives and artichokes.
- Add the tomatoes, olives, artichokes, corn, tuna and basil leaves into the rice.
- Add some olive oil and salt and mix the rice well.
- Place the rice into the refrigerator for 1 hour to cool down.
