Red Bell Peppers cooked in Olive Oil

A simple yet delicious side dish that uses very minimal ingredients but has an incredible Mediterranean flavor.

Ingredients
  

  • 3 tbsp extra virgin olive oil
  • 5 whole red bell peppers
  • 1 clove garlic
  • salt

Instructions
 

  • Slice the red bell peppers in half and remove the stem, seeds, and the insides of the bell pepper. Wash the pepper under running water to clear out any residual seeds.
  • Cut the peppers vertically into long strips about 1/4 of an inch thick.
  • Peel the clove of garlic and slice it in half vertically.
  • Place the oil into a frying pan and heat it up on a medium-high heat.
  • Add the garlic and cook the garlic for about 2-3 minutes or until the garlic turns golden.
  • Add the peppers and mix well.
  • Cook the peppers on a medium-high heat with a lid for 5-10 minutes stirring often to make sure the peppers don't burn. Add a dash of salt.
  • After 10 minutes, switch to a low heat and cook for another 5 minutes without the cover.
